I actually OD-ed on Salt Cod while we were in Portugal, but to be true to the Portuguese traditional ingredients, we decided that we had to do at least one recipe that included salt cod, quite literally, their national food stuff.

We de-salted the cod (it was pretty onerous job, after soaking it for 48 hours in 2 different waters and we actually decided to boil it in the end to get rid of some of the salt)

We heated up the potatoes and the salt cod in a pan and then once on the plate, drizzled our coconut, strawberry and beetroot sauce with curcuma, cinnamon and mild curry.

What little salt that remained in the codfish married well with the acidity of the strawberry sauce and the creaminess of the coconut milk (we chose the least sweet one we could find)
